Cinco de Mayo is here, jerks! Celebrate today with one of our faves…filet mignon burger tacos (and tequila.) Tacos are awesome, our filet mignon burgers are awesome, filet mignon burger tacos? Heaven. These bad boys are sure to start a fiesta in your mouth. Below is our recommendation for the best filet mignon burger taco, but you can always add a little extra something if ya want.
Filet Mignon Tacos
Servings; 8 persons
- 1 pound (three jerks) ground Filet mignon
- 4 oz Bacon cut in thin strips
- 1 medium onion, small dice
- 1 jalapeno minced
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon butter
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 2 ounces tequila
- 2 ounces beer (ale)
Fixings:
- 8ea. 8-10in flour tortillas
- 8 oz. Cheddar cheese, grated
- 6 Plum tomatoes, diced
- 1/2 head green leaf lettuce, shredded
METHOD
In a skillet over medium-high heat, melt butter, then add the bacon and onions. Cook until bacon is rendered and onions caramelized, then add the ground filet. Cook the meat until it's totally browned, then drain the fat. Add the, jalapeno pepper, chili powder, cumin, salt, and black pepper. Add tequila, beer and stir. Reduce the heat to low and simmer for 15 minutes.
For the fixings: Wrap the flour tortillas in foil and warm in the oven for 20 to 25 minutes. Serve with the grated cheese, diced tomatoes and shredded lettuce.
