Jerkified Potato Skins

Cookout season is upon us and while grilling everything from steaks, burgers and chops to chicken, fish and veggies is an easy upgrade to any menu, side dishes are often the star of the show. For another take on Potato Skins, consider new toppings like Three Jerks Jerky that bring flavor and fun to any BBQ.




Three Jerks Jerky (Any Flavor Works Great!)
Russet Potatoes
Cheddar Cheese
Diced Tomatoes
Fresh Basil, Thinly Sliced Into Threads
Sour Cream



  • Wash and bake potatoes until tender (6-8 minutes in the microwave if you’re in a rush or bake in the oven for 30 minutes at 425). Let cool and slice lengthwise.

  • Scoop out center, leaving about 1/3 in around all sides of and save scooped potato for another use if desired. Bake potato skins for another 10 minutes until lightly browned. While the skins bake, prepare your filling.

  • In a bowl, toss together shredded cheddar cheese, tomatoes and jerky. Carefully scoop the filling into the skins and return to oven for 5 minutes, until cheese is melted and lightly bubbling.

  • When skins have cooled slightly, top with basil threads, sour cream and chives.
